How to Fit into Those Jeans Again

As I was going through my closet the other day, I found my favorite pair of jeans that I thought I had left at the laundromat. It was a joyous reunion…until I tried them on. Not only could I not even button them up, I think I heard a ripping sound coming from one the seams. How is it that I gained this kind of weight so quickly? Oh, wait…I blame the holidays. I was particularly indulgent in December and now I am paying for it. You might be going through the same thing, but only find it safe to really think about it when you are reading articles like these, because like me, you might be looking for some quick weight-loss tips to get you started to healthier eating and a healthier diet. I have found that it’s important for your overall health (and your wallet!) to differentiate between diet gimmicks and true weight-loss methods. 

After disciplining yourself by staying on a diet for several weeks, it’s discouraging to discover that the plan you’ve been using doesn’t seem to work, you don’t lose the weight and those jeans you love still don’t fit. As a medical and dental practice management specialist, I  have learned from talking to medical personnel about the importance of having accurate information regarding dieting. Doctors and dentists want you to be healthy, so they often publish tips of their own in their medical and dental advertising materials. Having accurate information, especially when it is endorsed by your doctor, helps you feel good about being on a diet, especially when you begin to see results.  It is helpful to know these tips, particularly around holidays, where you need to readjust your eating habits to maintain moderation in the midst of temptation in order to keep the holiday weight gain at bay.

The biggest thing to keep in mind is that you’re not going to lose weight if you are consuming more calories than you burn. So read the nutritional information on food packaging and keep a food journal to track your calorie consumption. After keeping a food journal for a couple of months, you’ll be retain in your memory the approximate amount of calories in a slice of whole grain bread.

You also need to be sensible about some of your food choices. You can get more mileage for your weight loss goals if you have a snack of celery and salsa rather than fried chips and cheese sauce or ranch dressing. The celery turns to water eventually when broken down by the digestive system. The chips stay on your hips. Sad, but true. You can fill up just as efficiently during snack time if you go with the celery option. Keep in mind that your body loves to burn off vegetables and lettuces. You’ll have to work a little harder to burn off food like bread and pasta.  

If you want pizza, then fine, have a slice. One small slice. Not six. Enjoy a slice of pizza with a side salad using a vinaigrette dressing. Be mindful of the toppings you put on your slice of pizza. Pizza topped with sausage, pepperoni and extra cheese are not only going to be higher in calories, the sodium intake is going to shoot through the roof. Sodium retains water, giving you that bloat look to your belly. Instead, have a slice of cheese pizza. Better yet, have a slice of cheese-less pizza topped with fresh vegetables. You are eliminating several hundred calories with that choice.

If you are having pizza for dinner, perhaps you compromise and either eat a piece of fruit for dessert or you skip dessert entirely. Quite honestly, cutting the amount of sugar you consume will not only help you further in your weight loss, but it will probably eliminate the need for you to schedule any unnecessary dental consulting appointments because you think the candy bar you indulge in every night has given you a cavity.

There is absolutely no reason to deprive yourself entirely of the foods that you enjoy. Part of living a happy life is enjoying food. Just remember that moderation is the key. A heavy dish like fettuccine alfredo packs a horrifying amount of calories, fat and sodium, but if you think about it, all you really want is just three bites. So, enjoy those three bites before moving onto a delicious chicken or seafood entree.

Not only do you need to eat in moderation to lose weight, you also need to exercise to stay in shape and to enjoy the body you are proud of. Exercising will help you to lose and maintain your weight as well as keep your cardiovascular system healthy. It is simpler than it sounds. As a human, you are burning calories constantly, whether you are typing at your computer or doing the dishes or chasing after a child or even fidgeting. Give yourself an extra workout by taking a walk around your neighborhood for a half-hour. You’ll still be burning calories once you return home.  


Classic Chocolate Oatmeal Cookies with an Edge

What is twenty minutes to you? For some people, it might be checking out their favorite websites. For others, it might mean a call to a friend. Some might use their 20 minutes for some quick exercise, and others, yet, might use 20 minutes to make chocolate oatmeal cookies. That’s right, ten minutes for prep, ten minutes to cook and five seconds to devour if you have friends over to help you enjoy these delicious, simple cookies. This is a traditional classic recipe that’s always a popular favorite. A colleague of mine who is a dental practice management consultant likes to echo what the dentists tell us about eating too many cookies and other sugar-laden foods, but she cannot turn these cookies away. We traded our favorite cookie recipes at a dental marketing and advertising seminar, and you know what? I think I got the better end of the stick on this one. Seriously, twenty minutes to fresh-baked chocolate oatmeal cookies. Below is the recipe:

Prep: 10 min, Cook: 10 min.

* 3/4 lb. semisweet chocolate chips

* 1/2 cup soft unsalted butter

* 1 egg

* 1/2 cup sugar

* 1/4 tsp. vanilla extract

* 3/4 cup all purpose flour

* 1/4 teaspoon baking soda

* 1 teaspoon baking powder

* 3/4 cup quick or old-fashioned oats, uncooked

* 1/4 teaspoon salt (optional)

Preheat oven to 375°F. Separate 1 cup chocolate chips from the rest and melt this in a saucepan over low heat. Set aside.

Beat sugar and butter together in a bowl until smooth and fluffy. Add the melted chocolate, vanilla and egg.

Remaining ingredients should be combined in another bowl. Stir in the remaining chocolate chips and the chocolate mixture made previously.

Place rounded tablespoonfuls on an ungreased cookie sheet, bake 8-10 minutes as needed, then cool 1 minute on the cookie sheet before removing cookies to a wire cooling rack.

Sometimes I like to get creative with recipes, especially if it doesn’t add additional time. For this recipe, I have added walnuts and/or hazelnuts. I think I like the hazelnuts better, but they’re not always to everyone’s liking with it’s coffee-like taste. During the holidays, I’ll add cinnamon and nutmeg to the dough. Cookies made this way go well with milk punch and spiced tea. Learn from me and my recent dental consulting appointment where I found out that I had two cavities: consider substituting Splenda or another sugar substitute and avoid my dental fate.

Classic Pumpkin Pie with a Bite

3/4 cup granulated sugar
1.5  TBSP cinnamon
2 teaspoons chipotle chili powder
1/2tsp salt
1/2 tsp ground ginger
1/4 teaspoon ground cloves
2 large eggs
1 can (15 oz.) pumpkin
1 can (12 fl. oz.) evaporated milk
unbaked 9-inch (4-cup volume) deep-dish pie shell

Chantilly Whipping CreamDirections:

2 cups whipping cream
1/3 cup brown sugar
2 TBSP vanilla


Mix sugar, cinnamon, chipotle, salt, ginger and cloves in small bowl. If you want a little more heat, increase the amount of chipotle powder. Beat eggs in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk.

Pour into pie shell.

Bake in preheated 425° F oven for 15 minutes. Reduce temperature to 350° F; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. Top with Chantilly whipped cream before serving. 

Depending on how much chipotle chili powder you use, this pumpkin pie version can deliver quite a satisfying sting, which is very pleasant if you enjoy foods that are both sweet and spicy. For those trying to avoid the Great Holiday Waistline Expansion as well as extra dental consulting appointments for excessive sugar intake, I recommend using a sugar substitute such as Splenda in the pie. You can also use Splenda in the Chantilly whipping cream. Either way, you are sure to enjoy this unique pumpkin pie version.



Why You Should Make Your Muffins, Instead of Buying Them from a Bakery

Muffins have been getting a bad rap lately in the media due to the sheer portion sizes that are sold in coffee houses, bakeries and grocery stores. Many companies not only add additional sugar, they often include sugary fillings. If I were to eat muffins the size of my Prius, I would be carrying around the ubiquitous and undesirable “muffin-top” in my midsection. As a dental practice management consultant, I can vouch that many doctors and dentists are tasked with being the “bad guys” by using medical and dental advertising campaigns to caution and educate their patients about the consequences of a high-sugar intake. That said, there is no reason to give up muffins entirely. If you buy muffins from a bakery, then consider eating one half of the muffin and saving the other half for breakfast the next day. Better yet, make your own muffins using a portion-appropriate muffin tin. Even then, sometimes you might only want half, especially if you are eating a soft-boiled egg or a piece of bacon or ham in addition. One tip on baking muffins: when mixing, do not beat the batter into a cream, or you’re going to have a rubbery muffin filled with holes. Ten strokes only and then you’re golden, just like the muffins you’re about to make. Check out some healthy muffin recipes below.

Applesauce Oat Muffins

1-1/2 cups oats

1-1/4 cups flour

3/4 teaspoon cinnamon

1 tsp baking powder

3/4 tsp baking soda

1 c applesauce

1 egg

1/2 c milk

5 tbsp oil

1/2 c brown sugar

Preheat oven to 400 degrees. Combine oats, flour, cinnamon, baking powder and baking soda into a bowl. Add applesauce, brown sugar, milk, oil and egg. One note: you can substitute additional applesauce instead of oil for a healthier version. Mix until moist, but do not overmix, as stated above. Fill muffin cups 2/3 full and bake 20 minutes until it passes the toothpick test.

Raisin and Pumpkin Muffins

An idea: I am not fond of raisins, probably because as I child, I ate an entire container the size of a large cereal box in one sitting. Let’s just say that an hour or so later, I learned my own lesson in moderation, and to this day, I cannot look at a raisin without feeling queasy. Plus, the “look” of a raisin is not a naturally pleasing sight to me, ergo, I use CHOCOLATE CHIPS instead. That’s right, chocolate! Though, I suppose if you are sick, twisted creature, you can use both ingredients in this recipe; just make sure to adjust the amounts accordingly.

1-1/2 cups flour

1/2 cup Splenda

2 tsp baking powder

1/2 tsp salt

1 tsp cinnamon

1/2 tsp nutmeg

1/2 cup milk

1/2 cup pumpkin

1 tsp vanilla

5 tbsp melted butter

1 egg beaten

1/2 cup raisins, or chocolate chips

Preheat oven to 400. Mix dry ingredients together. Add milk, pumpkin, vanilla, butter and egg, stirring gently 2 times. Add raisins, if that is what you are using, or chocolate chips, and stir just until moistened. While the batter will be lumpy, do not overmix. I know I’ve said that three times probably, but it is an important rule. Fill muffin cups 2/3 full and bake approximately 18-20 minutes or until it passes the toothpick test.

Substituting applesauce instead of oil, and using Splenda instead of sugar will decrease the amount of calories and fat, which will keep your waistline healthy and manageable and your teeth free from unnecessary medical and dental consulting appointments. The great thing about muffins is that they are appropriate for every holiday, and are easy to take to brunch parties or to the office to treat your co-workers. Enjoy!


Nestle-Tollhouse Chocolate Chip Cookie Recipe

I bet the first cookie you ever tried as a child was a chocolate chip cookie and you probably learned very early on if you preferred your cookie soft and chewy, crunchy, packed with chips or chocolate chunks. Due to the different recipes, different types of ovens as well as altitude, homemade chocolate cookies are never created in the same way, leading to new discoveries and new tastes from every cookie that you might encounter. After several years of working as a dental advertising associate, I often urge my clients and their administrative staff to promote healthy, preventive measures in their dental practice management campaigns to maintain good dental hygiene by avoiding sugary desserts. I will secretly admit, as will many dentists, that the chocolate chip cookie does not apply to preventative measures. It is simply too ingrained for most of us to not only accept a chocolate chip cookie, but to eat it with gusto.

Did you know, like many great things, that the chocolate chip cookie was created out of resourcefulness resulting in a baker’s chocolate shortage? It’s true. As owners and operators of the Toll House Inn in 1930s Massachusetts, Ruth Wakefield and her husband wanted to give their guests a personalized experience with their accommodations. Ruth was reputed to be a whiz with desserts, particularly with her famous Butter Drop Do cookie, which called for the baker’s chocolate. Well, while making a batch, she found that she was out of the bakers chocolate, so she used semi-sweet chocolate from a bar given to her by a man who happened to be staying at the inn named Andrew Nestle. Nestle, get it? It’s true. The very first chocolate chip cookie ever made anywhere was at the Tollhouse Inn using Nestle chocolate. As you can guess, this new cookie went over very well, and to use the old cliché, the rest is history. Here is the original Toll-House Cookie recipe from their website at

2         1/4 cups all-purpose flour

3         1 teaspoon baking soda

4         1 teaspoon salt

5         1 cup (2 sticks) butter, softened

6         3/4 cup granulated sugar

7         3/4 cup packed brown sugar

8         1 tsp vanilla extract

9         2 large eggs

10     2 cups (12-oz. pkg.) Nestle-Tollhouse Chocolate Chips

11     1 cup chopped nuts

Directions: Edit this text   

PREHEAT oven to 375° F.

In a small bowl, combine flour, baking soda and salt. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually add in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.

BAKE for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

PAN COOKIE VARIATION: Grease 15 x 10-inch jelly-roll pan. Prepare dough as above. Spread into prepared pan. Bake for 20 to 25 minutes or until golden brown. Cool in pan on wire rack. Makes 4 dozen bars.

Here’s a note for the people who live on top of a mountain. For High Altitude Baking (5,200 feet): Increase flour to 2 1/2 cups. Add 2 teaspoons water with flour and reduce both granulated sugar and brown sugar to 2/3 cup each. Bake drop cookies for 8 to 10 minutes and pan cookie for 17 to 19 minutes.

The Nestle-Tollhouse chocolate chip recipe is as classic and American as Coca-Cola and Ford. The wonderful thing about this recipe, or with any chocolate chip cookie recipe for that matter, is that you can really be creative with it. I received a tip from one of my clients during a dental marketing and advertising seminar to add cinnamon and all-spice to the mix for a unique flavor. I’ve also tried the recipe by adding crushed hazelnuts and grated chocolate to the dough before cooking. Although, it’s ill-advised to eat raw cookie dough, it’s certainly hard to resist!




This One Lifestyle Change Will Slim You Down and Keep You Looking Young

It seems everywhere you look, whether it be online or in magazines, there’s always some nutritional “expert” or diet guru shilling the latest trends on losing weight. If they were to be believed, whatever aid or pill they are selling would have you fifty pounds less with a perfectly toned body in less than a week. Honestly, that’s not the way it works no matter how fancy their marketing package is. The legitimate experts will tell you what your doctor has probably told you: if you want to lose weight, you have to burn more calories than you consume. It really is that simple. In fact, if you think about it, it’s easier than remembering to take a pill every day that is not guaranteed to work anyway. Losing weight and keeping it off involves a lifestyle change in your diet. As a dental practice management consultant, I work with clients who advocate healthy dietary habits as a lifestyle change in their dental advertising materials.

Changing your dietary lifestyle does not mean you have to starve yourself. In fact, it’s counterproductive to weight loss goals as you’ll end up increasing your calorie intake. If you skip a meal, say breakfast, then you’ll justify that fast-food double-decker hamburger and greasy fries for lunch, which adds up to more than a day’s worth allotment for calories and fat. Instead, eat a healthy breakfast in the morning, such as oatmeal, which will keep you full until lunch. Try a salad tossed with fresh vegetables and a piece of chicken for lunch. Choosing foods rich in fiber such as vegetables and whole grains are easier for your body to burn and they keep you satisfied and energetic throughout the day.

Be sure to increase your water intake. Water is a large percentage of what constitutes the makeup of the human body and is instrumental in losing weight. If your body feels deprived of water, it will store it, and thus, you retain that water, which causes uncomfortable bloating. By drinking plenty of water on a regular basis, you are able to flush out the excess water weight that will help you lose a couple of additional pounds. While it is recommended for people to drink no less than eight glasses of water a day, you can find tools by using a search engine on the internet to calculate the amount of water you need to drink a day depending on your current weight and environmental factors. For example, if you live in a warm climate, you should drink more water to compensate for any loss due to sweating. Drinking water might also increase your metabolism, so even when the body is it rest, you are still burning calories.

Making a lifestyle change to your diet will not only help you lose pounds, it will keep your body and mind healthy in the long run. Note that it is a good idea to cut down or avoid fatty foods, foods with high-sodium content and excessive sugar. Not only will you notice that the “bloat float” has sailed, you will have greatly decreased your chances of having to make any unnecessary medical or dental consulting appointments due to complications caused by poor diet and exercise. Another benefit: eating healthy, watching your calories, exercise and drinking plenty of water has been said to slow down the aging process.
